This craft meats business is named after the story of Moses, Aaron and the red heifer in Numbers 19 in the bible. Prophecy states that before the 3rd temple can be built in Jerusalem (i.e., ushering in the Messianic phase) there must be a red heifer with certain strict characteristics sacrificed. We chose the name Prophecy Craft Meats after prayer in hopes of bringing glory to God. There have been nine special red heifers that have been sacrificed, according to the bible, and there are currently three red heifers vying to be the tenth in Israel.  

Most of the beef in this program is from virgin Akaushi heifers but occasionally we have the pleasure of offering beef to our customers from aged females. We also have the pleasure in offering them pork from hand finishing, locally sourced Berkshire hogs. 

Dr. Cooper has worked with many astute Wagyu and luxury protein programs around the world since 2016. Prophecy Craft Meats is his personal collection and signature vintage. Developing an incredible steak has been a dream of Dr. Cooper's since he was a young kid growing up in west Texas. It has taken many years to be able to feed and finish our animals in a customized artesian manner. We feel blessed by this and put pride into our work. 

The genetics are custom designed and so is the feeding style. Dr. Cooper refers to it as 'low and slow' and it has some similar components to the style of feeding Akaushi in southern Japan. At our farm in Giddings, TX we utilize a custom blended ration from our local provider that is based on ground corn.  We take this feed that kind of smells like popcorn & peanut butter and further enhance the naturally beautiful nutty & pecan flavor notes inherent in the Akaushi beef. The hay consumed is barn stored, top quality Sorghum Sudangrass that carries scents of molasses and hints of tobacco. The cattle stay under the large Post Oak and Cedar trees on a gentle hillside in front of our barn. 

We are not corporate-owned or controlled by private equity, so we only produce so many carcasses per year. Due to the high demand, we are sold out but can add you to the waiting list if you email us. Year by year we are able to produce more carcasses.
